Starlight Cake

Cake:

  • 2 cups flour
  • 1 1/2 cups sugar
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup soft shortening
  • 1 cup milk
  • 1 teaspoon vanilla
  • 3 eggs

Sift together four sugar, baking powder and salt.

Add shortening, milk and vanilla. Beat 2 minutes at medium speed.

Add eggs and beat two minutes more.

Pour in greased 9 x 13 pan (or two 9 x 9 pans). Bake 30 minutes at 350F.

Icing

  • 1/2 cup butter, softened
  • 3 cups Lantic or Rogers Icing Sugar
  • optional: 1/3 cup sifted cocoa powder for chocolate icing
  • 1 tsp Vanilla extract
  • 2 Tbsp Milk

Cream 1/2 cup soft butter with 2 cups icing sugar (and cocoa powder, if making chocolate icing). Beat 1 tsp. vanilla, 2 tbsp. milk and 1 cup Lantic or Rogers Icing Sugar into mixture. Gradually add 2 tbsp. milk into icing until smooth and of desired spreading consistency.
