Roast Pigeon & Veggies
Pigeon
- 3 pigeons
- 1 1/2 teaspoons sage
- 1 1/2 teaspoons rosemary
- parsley
- 3 cloves garlic
- olive oil
- 1/2 onion
Mix spices, oil, and onion. Stuff mixture into pigeon breasts.
Veggies
- veggies (1 1/2 zucchini & peppers, 2 large carrots, onion)
- olive oil
- garlic powder
- salt
- pepper
Heat oven to 400F.
Mix veggies, oil, salt, pepper, and garlic powder.
Put everything together on a parchment-lined cookie sheet, with the pigeons breast down.
Bake 20 min, flip pigeons and stir veggies. Bake additional 10 minutes or until desired doneness.
