Potato Bacon Cheddar Soup
- 4 cups peeled and diced potatoes
- 1/4 cup butter
- 1/4 cup flour
- 3-1/2 cups milk
- 1 tablespoon onion powder
- 3 teaspoons chicken oxo
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 teaspoon dried dill weed (optional)
- 2 tablespoons dried parsley, or to taste
- 6 Tbsp real bacon bits
- Cheddar cheese to taste
Peel and dice potatoes. Cook & drain.
Melt butter in saucepan over medium heat. Stir in flour. Add milk and stil in well. Heat, stirring constantly, until starts to thicken. Add cooked potatoes, salt, pepper, parsley, dill, onion. Adjust seasonings to taste. Bring to light boil, stirring constantly. Remove from heat and stir in bacon bits and cheese.
