Porcupines
- 1 pound lean ground beef
- ½ cup uncooked white rice
- ¼ cup chopped onion
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 cup sliced onion
- ½ bell pepper, cut into strips
- ½ cup strips of carrot
- 3 cups tomato juice
Put first five ingredients in bowl. Mix. Shape into 25 balls. Arranged in 9x9 pan or 3 quart casserole, in single layer.
Lay onion slices, pepper strips, and carrot strips among meatballs.
Pour tomato juice over top. Cover. Bake in 350 oven for about one hour until rice is cooked. Makes 25 meatballs.
