Dark Chocolate Blueberry Energy Bites
- 1 cup rolled oats
- 2 scoops Plant Fusion Vanilla Bean Protein Powder
- ½ cup unsweetened cocoa powder
- 2 cups frozen unsweetened blueberries, thawed and drained
- 2-4 tbsp water
Add the oats, protein powder, and cocoa powder to a large bowl, and stir until thoroughly combined.
Add the blueberries to a food processor, and pulse until smooth. Add the blueberry purée to the oat mixture, and stir until incorporated. If the mixture looks dry, add a few teaspoons of water at a time until everything sticks together. (Note: If the mixture is too wet to shape, refrigerate for at least 1 hour, or until firm.) Roll the mixture into 30 small balls.
IMPORTANT PROTEIN POWDER NOTES: This recipe was specifically designed for the plant-based protein powder listed in the Ingredients list. Most protein powders behave differently, especially when it comes to absorbing moisture. If you substitute a different plant-based protein powder, you may need to add more protein powder if the dough is too wet OR more milk if the dough is too dry.
Do NOT substitute whey-based protein powder; the mixture will be too sticky to roll into balls.
