Black Bean Chili

Chili

  • 1 pound dry black beans, rinsed and picked over
  • 1 medium white onion, peeled and diced
  • 6 cloves garlic, peeled and minced
  • 4 cups vegetable stock (or water*)
  • 2 cups (16oz/ 500ml) salsa verde, homemade or store-bought
  • 1 (28oz / 796ml) can fire-roasted diced tomatoes
  • 1 (12oz / 340ml) jar roasted red peppers, drained and diced
  • 1 tablespoon ground cumin
  • 2 teaspoons chipotle chili powder (or regular chili powder)
  • hamburger, if desired (optional)
  • salt and pepper, to taste

Toppings:

  • corn chips, shredded cheese, diced avocado, chopped fresh cilantro, diced red onion, sliced jalapeños or serranos

Put all ingredients in slow cooker. Stir to combine. Cover and cook for 6-8 hours on high, or until the beans are completely tender. OR Put all ingredients in instant pot. Stir to combine. Cook on chili setting. Keep warm until ready to eat.

Give the mixture a good stir. Taste, and season with extra salt and pepper as needed.
