Cheese Scones

  • 2 cups flour
  • 1/4 cup sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold butter or margarine
  • 1 cup shredded sharp cheese
  • 1 egg
  • 2/3 cup milk

Instructions

In large bowl put flour, sugar, baking powder and salt. Add butter. Cut in until crumbly. Stir in currents. Make a well in centre.

In small bowl, beat egg until frothy. Stir in milk. Pour into well. Stir with a fork to form soft dough. Turn out on lightly floured surface. Knead 8-10 times.

Divide into two equal parts. Pat each into 6 in circle. Transfer to greased baking sheet. Score each top into six pie shaped markings. OR Divide into 12 portions and shape into biscuits.

Brush tops with milk.

Bake at 425F for 15 minutes until risen and browned slightly.
