Avocado Black Bean Quesadillas
Single Serving:
- 1/8 onion, sliced
- 1/8 bell pepper, sliced
- broccoli florets (optional)
- 1 teaspoon olive oil
- 1 cup canned mixed beans, drained
- 3/4 teaspoon taco seasoning
- 1 medium soft flour tortilla
- 1/2 avocado, peeled, halved, seeded and sliced
- salsa
- 1/8 cup minced cilantro
- 1/4 lime
- 1/4 cup light Mexican Cheddar or mozzarella cheese
- oil or cooking spray for grilling
Microwave avocado to make it easer to mash. In a small bowl, lightly mash the avocados with a fork. Stir in salsa, cilantro and juice of, season with salt and pepper to taste. Set aside.
In a medium pan over medium-high heat, sauté onion and bell pepper in oil for 2-3 minutes or until tender. Add the beans and taco seasoning. Cook for another minute. Transfer mixture into a small bowl and set aside.
Rinse and wipe down pan and return to heat. Add 1/2 tsp oil and add the wrap for a few minutes to crisp.
Spread mashed avocado onto the tortilla, top with bean mixture and cheese, and fold the tortilla closed.
Cook on medium-high heat for 2-3 minutes per side or until the outside is crispy and cheese has fully melted. Serve with your favorite salsa or sour-cream.
